GRILLED CHICKEN AND VEGETABLES CACCIATORE

1 lb chicken thighs
salt and ground pepper to taste
2 cloves garlic, finely chopped
1/4 cup chopped fresh herbs such as oregano, thyme and rosemary
1/4 cup olive oil
2 onions, cut into wedges
1 (10 oz) pkg mushrooms, quartered
2 tomatoes, seeded and coarsely chopped
1/4 cup red wine
Preheat grill or broiler. Season chicken with salt and pepper.
In small bowl, combine garlic, herbs and oil until blended. Remove 2 tbsp garlic mixture to another bowl and brush over chicken. In large bowl, combine onions, mushrooms and remaining garlic mixture and toss until evenly coated.
Grill or broil chicken, turning occasionally, 20 minutes or until meat thermometer inserted in thickest part of thigh registers 180 degrees.
Grill vegetable mixture in gril
l wok or on grill screen, stirring occasionally, until tender. Add tomatoes; grill just until heated through. Remove vegetables to bowl; stir in wine and keep warm. To serve, spoon vegetable mixture over and alongside chicken. Serves 3-4
