MACARONI AND CHEESE ITALIAN-SYTLE

1 lb macaroni
1/4 cup butter
3 tbsp flour
2 cups chicken stock
1/4 cup sherry
1 cup heavy cream
1 cup Fontina cheese
1/2 cup Emmenthaler and Gruyere cheese, shredded
1/2 tsp thyme
1/8 tsp nutmeg
Salt and cayenne pepper
1/4 cup bread crumbs and parmesan cheese, grated
Cook pasta, undercooking slightly and drain. Melt butter, stir in flour and cook for 1 minute. Gradually whisk in stock. Bring mixture to a boil and boil 1-2 minutes. Whisk in sherry and cream and bring just to a boil. Remove from heat and stir in cheeses until melted. Stir in seasonings. Pour into a 13x9 inch baking pan. Sprinkle with bread crumbs and parmesan cheese. Bake at 375 for 30 minutes.
