NEW ORLEANS CORN BISQUE WITH SAUSAGE

4 tbsp butter
2 tbsp flour
1/2 cup onion, chopped
1 (1 lb) pkg smoked sausage, cut into 1/4 inch slices
1 quart milk
1 (16 oz) can cream-style corn
1 can cream of potato soup, undiluted
1 tbsp pepper sauce and Cajun seasoning
1/2 cup grated cheddar cheese
1/4 cup chopped parsley

Melt butter, add flour and blend thoroughly then add onion and smoked sausage. Saute over medium heat for 5 minutes. Add next 5 ingredients, cover and cook over low heat for 20 minutes. Stir occasionally. Just before serving, sprinkle with cheese and parsley. Makes 2 1/2 quarts
