CHEESY HAM AND NOODLE CASSEROLE

3 tbsp butter and flour
3 cups milk
Salt and pepper, to taste
Dash nutmeg and cayenne pepper
1/2 lb cheddar cheese
1/4 cup chopped onion
1/4 lb mushrooms, sliced
1/2 lb cooked ham, cut into small pieces
3/4 lb broad noodles, cooked
2 tbsp vermouth or white wine
1/4 cup grated parmesan cheese and seasoned bread crumbs

Preheat oven to 450. Saute onions and mushrooms in 1 tbsp butter until tender. Add remaining butter and flour and seasonings. Add milk, stirring until it starts to thicken. Add cheese and vermouth; stir until it melts. Add ham and noodles, gently folding so as not to break up noodles.

Turn into an 13x9 inch baking dish. Combine parmesan cheese and seasoned bread crumbs. Sprinkle over casserole. Bake for 15-25 minutes or until bubble and bread crumbs and browned. Serves 10-12.
