Pastry for 2 (9 inch) pie shells
1 cu ricotta cheese
3 eggs
4 oz Italian sausage, cooked, crumbled and drained
4 oz mozzarella cheese
1/2 cup sliced pepperoni, halved
1/2 cup ham and salami, cut into strips
1/4 cup grated parmesan cheese
1 beaten egg
2 tbsp milk

Preheat oven to 450. Line a 9 inch pie pan with half of pastry. Do not poke holes in crust. Bake at 450 for 4-5 minutes. Remove and reduce oven temperature to 350.

Mix together ricotta and eggs. Fold in meats and parmesan cheese. Turn into partially baked pastry shell. Fold out remaining pastry to an 8 inch circle. Cut into 6-8 wedges. Place wedges on top of filling. Bake for 2 minutes.

Combine egg and milk; brush over pastry wedges. Continue baking for 20-25 minutes more until golden brown. Let cool; set 10 minutes before serving.
