SANTE FE MEAT LOAF

2 lb lean ground pork
1 tsp vegetable oil
2 medium onions, finely chopped
4 cloves garlic
1 jalapeno pepper, seeded & minced (wear rubber gloves)
4 tbsp minced dried tomatoes
1 tbsp chili powder
1 tsp ground cumin
1 1/2 tsp salt
1 tsp thyme
1/2 tsp cayenne
1/2 cup finely chopped parsley
1/2 cup bread crumbs
1/2 cup skim milk

In large nonstick skillet heat oil over medium-high heat. Saute onions and garlic until soft, about 10 minutes. Cool slightly and transfer to large bowl. Add all remaining ingredients and mix thoroughly.

Place mixture in a loaf pan and bake at 350 for 1 1/2 hours. Remove from the oven and allow to rest 10 minutes before removing from pan. Slice to serve warm, or wrap well and refrigerate for sandwiches. Servings: 8
