THAI-STYLE GRILLED PORK CHOPS

4 pork chops, about 1-1/4-inches thick, well trimmed
1 tsp grated lemon peel
4 crushed garlic cloves
1/4 cup grated ginger root
1 tbsp chili powder
1/2 tsp ground coriander
1/2 tsp black pepper
1/2 tsp crushed red chilies
3 tbsp water
Place all ingredients except pork chops in blender container; blend until smooth and spread about 2 tsp of paste on each chop, covering both sides. Cover chops and refrigerate for 2 to 24 hours.
Prepare medium-hot. Grill chops directly over coals just to 150 degrees internal, about 7 to 8 minutes per side. Cover and rest for 5 minutes. Serves 4.
