BLEU CHEESE FILET

Category: Beef Steaks

4 (7 oz) filets
Montreal Steak Seasoning
1/2 cup bleu cheese crumbles
3/4 cup heavy cream
2 tbsp olive oil
2 cups button mushrooms
3 oz port wine
1 tbsp butter
1 tbsp chopped fresh basil
Salt and Pepper

For the Bleu Cheese Sauce: Place the cream in a sauce pot and bring to a simmer. Reduce the cream by 1/2 and turn heat to low. Add the bleu cheese crumbles and allow to soften.

For the Port Mushrooms: In a saute pan, heat the oil on medium high and add the mushrooms. Saute until slightly brown and beginning to soften. Season with salt and pepper, reduce heat and add the port wine. Reduce the wine until liquid is absorbed almost fully by the mushrooms. Add the butter and stir until melted and creamy. Top with chopped basil.

For the steaks: Season the steaks generously on both sides. Grill over medium high heat until desired temperature is reached. Remove steaks from grill and top with 1/4 each of bleu cheese sauce and port mushrooms. Serves 4
