FILET AND SHRIMP WITH KEY LIME BUTTER

4 (7 oz) filets
Montreal steak seasoning
20 (21-25 medium) sized shrimp
1/2 cup fresh lime juice
2 tbsp a1 steak sauce
1 tbsp chopped fresh cilantro
1/2 tbsp chopped chipotle pepper, chopped garlic and chopped shallot
1 tbsp honey
Salt and pepper to taste
1 cup butter, softened (allow to sit out on counter for about 30 minutes)
2 lemons, optional
Parsley
For the Shrimp (part 1): Clean and devine shrimp. Set aside/store in refrigerator while working on other steps.
For the Key Lime Butter: Combine all ingredients, except butter, in a mixing bowl and puree on high. Fold in butter on low speed and mix until fully incorporated. Use immediately or store in airtight container in refrigerator for future use.
For the Steaks: Season the steaks generously on both sides. Grill over medium high heat until desired temperature is reached.
For the Shrimp (part 2): Remove Shrimp and Key Lime Butter from refrigerator. Thread 5 shrimp to a skewer. Grill on medium high heat until shrimp turn pink. Baste shrimp with butter while grilling until desired temperature is reached.
Plate Filet and Shimp together. Add one extra dollup of butter to shrimp skewer. Garnish with a grilled lemon wheel and parsley. Serves 4
