THREE RICE PILAF

Category: Rice/Risotto

1/4 cup chopped onion
3 tbsp butter
4 cups water
4 tsp instant chicken bouillon granules
1/2 tsp minced garlic
1/8 tsp pepper
1/2 cup wild rice
1/2 cup brown rice
1 cup long-grain white rice
2 tbsp finely chopped green or red bell pepper
1 tbsp dried snipped chives

In a Dutch oven, cook onion in butter until tender, but not brown. Carefully add wanter and next 3 ingredients to onion mixture. Bring mixture to a boil.

Thoroughly rinse the wild rice. Add to boiling mixture with brown rice. Reutrn to boiling; reduce heat. Cover and simmer for 25 minutes. Stir in long-grain rice into mixture and return to boiling; reduce heat. Cover and simmer for 15 minutes or until rice is tender. Stir in bell pepper and chives. Serves 8
