WHITE CHOCOLATE AND MACADAMIA NUT CHIPPERS

2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
3/4 cup granulated and firmly packed brown sugars
1 egg
1 tsp vanilla extract
2 cups white chocolate chips, or bulk white chocolate cut into 1/4 inch chunks
1/2 cup macadamia nuts, coarsely chopped
1/2 cup coconut (optional)

Preheat the oven to 375. In a large mixing bowl, combine the flour, baking soda, sugars, and egg until fluffy. Stir in the dry ingredients and blend in the vanilla. Gently stir in the chocolate, nuts, and coconut.

Drop by tablespoonfuls onto ungreased baking sheets, spacing cookies a few inches apart. Bake for 8 to 10 minutes, or until cookies are golden brown. Cool slightly, then remove to wire racks to cool completely.

For a special treat, make 6-inch cookies and serve warm with ice cream. You can substitute 1 cup semisweet chocolate chips for 1 cup of the white chocolate chips, and use almonds instead of macadamias.

Yield: 2 1/2 dozen
