SOUTHWEST AU GRATIN POTATOES

2 tbls vegetable oil
1/4 cup chopped red onion
1 jalapeno finely chopped and seeded
2 lbs sliced Yukon gold potatoes
1 lb sliced baking potatoes
1 1/2 tsp steak seasoning
1 cup chicken stock
1 cup cheese sauce (1/4 cup milk, 3/4 cup Velveeta cheese) heat in a sauce pan until creamy.
1 cup grated smoked cheddar cheese
1 cup grated pepper jack cheese

Heat oil in a saute pan, add the onion and jalapeno cook until soft. Add the potatoes and brown slightly. (You may need to brown these in batches.) Place all of the ingredients in a greased baking dish, mix well and cover with foil. Bake at 400 for 40 minutes. Remove foil add some extra cheese on top and bake for 5 minutes until the cheese is golden brown. Serves 4-6
