How to Brulee a Cheesecake

1 Cheesecake
Raspberry Sauce
Fresh Seasonal Fruit, sliced (Strawberries, Raspberries, Blackberries, or Blueberries)
Granulated Sugar (approximately 2 tbsp per slice)
Whipped Cream
For the Raspberry Sauce:
1 cup sugar
1 cup water
1 quart fresh or frozen raspberries
Place water and sugar in a sauce pan and bring to a boil. Remove from heat and stir in the raspberries. Let stand for about 10 minutes. Place the mixture into a blender and puree until smooth. Strain the sauce through a fine mesh strainer to remove the seeds. Place into an airtight container and refrigerate.
How to Brulee the Cheesecake:
Sprinkle the granulated sugar evenly over the top of the cheese cake and slowly pass a hand held torch (most gourmet stores carry these) over the sugar. Sprinkle more sugar as you are caramelizing until the sugar is melted and begins to drip down the sides. The crackly sugar topping provides a wonderful texture contrast to the creamy filling of the cheese cake. If you prefer, you can place the cheese cake on a cookie sheet, place it on the top rack of your oven and broil 4-6 inches from heat for about 1 to 1 1/2 minutes until hot and bubbly.
It is time to add the raspberry sauce, fresh berries and whipped cream! You now have an elegant, decadent dessert that is a sure crowd pleaser!
