ITALIAN CHEESE STUFFED CHICKEN BREASTS

8 boneless, skinless chicken breasts
Salt, pepper and Italian seasoning, to taste
1 cup ricotta cheese
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
Additional shredded mozzarella cheese, for topping
2 cups favorite spaghetti or marinara sauce

Preheat oven to 350. Split chicken in half lengthwise and cut almost all the way through. Lightly pound to thin out each breast. Sprinkle with salt, pepper and Italian seasoning.

Mix together the cheeses and spinach; spoon over half each breast. Fold over and secure with a toothpick.

Place chicken in a casserole dish and tightly cover with foil. Bake for 20 minutes or until chicken is cooked. Spoon sauce over chicken and sprinkle with additional cheese. Continue to bake for another 5-10 minutes or until chicken is cooked through and cheese has melted.
