CHINESE CHICKEN AND RICE BAKE - Easy

1 pkg white and wild rice mix, cooked according to package directions
4 whole chicken breasts
2 can cream of mushroom soup
1 tsp soy sauce
1 cup chopped celery and green or red bell pepper
1 cup frozen peas
1 cup thinly sliced carrots
1 clove garlic, minced
3/4 cup mayonnaise, not salad dressing
1 medium chopped onion
1 can water chestnuts, drained and sliced
1 pkg slivered almonds

Spread cooked rice evenly over the bottom of a casserole dish. Place chicken breasts on top. Blend remaining ingredients and pour over chicken and rice. Refrigerate overnight. Bake at 350 for 1 hour.
