GREEN RICE CASSEROLE

7 oz instant rice
1 lb velvetta cheese, cut into 1/2 inch cubes
1 pkg frozen chopped broccoli, steamed
2 eggs
2/3 cup milk
1/2 cup cooking oil
1 medium onion, chopped
1 clove garlic, minced
1 can cream of mushroom soup

Cook rice according to package directions. Combine rice with remaining ingredients and pour into a large baking dish. Bake at 350 for 1 1/2 hours. Serves 8-10
