HOT TURKEY AND CHEDDAR CASSEROLE

3 cups cubed leftover turkey
3/4 cup chopped celery
1 (5 oz) can sliced water chestnuts, drained
1/2 cup chopped red bell pepper
1 1/3 cup mayonnaise, not salad dressing
1 tbsp grated onion
2 tbsp lemon juice
2 cups shredded sharp cheddar cheese, divied
1 cup shredded mozzarella cheese, divided
1 cup crushed cornflakes

Preheat oven to 350. Lighty spray a 13x9 inch baking pan with cooking spray. In a medium bowl, combine first 7 ingredients, 1 cup cheddar cheese and 1/2 cup mozzarella cheese; mix well. Place mixture in baking pan and bake for 25-30 minutes or until heated through.

Meanwhile, in a bowl, combine remaining cheeses and cornflakes and sprinkle mixture over casserole. Return to oven and bake an additional 5-8 minutes or until cheese melts.
