FESTIVE MEATLOAF

2 eggs
2 lbs ground meat (I use combination beef and pork)
1 (14 1/2 oz) can whole tomatoes, cut up and juice reserved
3/4 cup cracker crumbs, about 20
1/2 cup chopped onion
2 tbsp chopped parsley
1 tsp salt
1/8 tsp pepper
1 cup packed brown sugar 
1/4 cup cider vinegar and pineapple juice
2 1/2 tbsp mustard
3 pineapple slices
3 maraschino cherries
Preheat oven to 350.   In a large bowl, beat eggs and add next 7 ingredients.  Mix until well blended.  Shape into a loaf and place in bake pan.  Bake for 1 hour.
Meanwhile, combine brown sugar and next 3 ingredients in a small saucepan.  Simmer 10 minutes, stirring occasionally.  
Remove meatloaf from oven; drain off fat.  Arrange pineapple and cherries on top of loaf.  Brush with glaze; keep remaining glaze warm.  Bake 30 minutes longer.  Remove from oven and allow to rest about 10 minutes before slices.  Serve with reserved warm glaze over slices.
