* 15 BEAN SOUP *

20 oz Mix of: Northern, Pinto, Large Lima, Blackeye, Garbonzo, Baby Lima, Green Split Pea, Kidney, Cranberry Bean, Small White, Pink Bean, Small Red, Yellow Split Pea, Lentil, Navy, White Kidney, Black Bean - or any combination of beans you choose. Wash beans with water and remove any debris!
2 quarts water
Chunks of ham, smoked turkey, smoked neck bones, short ribs, ham hocks or ring of smoked sausage, chopped
2 chicken bouillon cubes
1 large onion, chopped
1 can (15 oz) tomatoes
1 large onion, chopped
3 celery ribs, chopped
4 carrots, sliced
Red pepper to taste or 1 tsp chili powder
3 bay leaves
2 tbsp chopped parsley
1 tsp Greek seasoning mix, dried thyme and dry mustard
Salt and Pepper to taste
2 clove minced garlic
juice of 1 lemon

Place beans in a pan, cover with water and soak overnight. In morning, drain, add 2 quarts water. Add your meat choice (ham, ham hock or smoked sausage). Bring to boil. Simmer slowly, uncovered 2 1/2 or 3 hours.

Add chopped vegetables, tomatoes, spices, lemon juice, garlic, salt, pepper and seasonings of choice. Simmer 30-50 minutes or until beans and vegetables are tender. Serves 6
