FAJITA SOUP

Category: Soups

1 tsp each ground cumin, chili powder and garlic powder
1/2 tsp cayenne pepper
1/2 lb top round beef, cut into thin strips
1 tbsp olive oil
1 large red onion, diced (about 1 cup)
2 red and/or green bell peppers, diced (about 2 cups)
1 (141/2 oz) can diced tomatoes, undrained
3 cups beef broth
2 tbsp lime juice
1 tbsp grated lime peel
1/4 cup chopped fresh cilantro
Fried tortilla strips
Sour cream
Diced avocado

Combine first 4 ingredients. Add beef and toss to coat. Heat olive oil in a large saucepan and brown beef over medium-high heat. Remove beef and set aside.

Add onions and peppers and cook until vegetables are softened, about 4 minutes. Add beef, tomatoes with their juice and broth and bring to a boil. Reduce heat and simmer until beef is tender, about 45 minutes.

Stir in lime juice, lime peel and cilantro. Heat through and serve with tortilla strips, sour cream and avocado. Serves 4
