CHEDDAR AND TURKEY STUFFED POTAOES

3 large baked potatoes, baked and cooled slighted
1 can cream of broccoli soup
1/4 cup milk
2 cups grated cheddar cheese
1/2 cup cooked broccoli florets
1/2 cup cooked, diced carrots
1 cup cooked, chunked turkey
1/2 tsp sage
Salt and pepper
Preheat oven to 350. Halve cooked potatoed lengthwise and scoop out flesh into a large bowl, leaving a 1/4 inch thick shell.
In a small saucepan, combine soup, milk and cheese. Cook over medium heat until cheese is melted and mixture is smooth.
Coarsely mash potatoes with 1 cup cheese sauce. Mix vegetables and turkey into potato mixture. Add seasonings and gently spoon mixture into potato shells. Place in a casserole; cover and bake for 20 minutes. Serve remaining cheese sauce on the side.
