10 tbsp butter, room temperature
2/3 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups flour
1 1/4 cups quick cooking oatmeal
1 cup raisins and coarsely chopped walnuts
Preheat oven to 325. Lightly grease 2 cookie sheets. Cream together first 5 ingredients until light and fluffy. Reduce speed and add dry ingredients. Beat until well mix. Stir in remaining ingredients by hand. Drop dough by tbspfuls 2 inch apart on an ungreased cookie sheet. Bake for 17 minutes or until lightly browned. Let stand 5 minutes before remove to wire racks to cool completely.
OATMEAL PEANUT BUTTER COOKIES
1/2 cup shortening
1/2 cup butter, softened
1 cup packed brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 cup quick-cooking oats
1 1/2 cups chopped pecans
Preheat oven to 350. In a large bowl, cream together shortening, butter, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended.
Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats and nuts until just combined. Drop by cup fuls onto ungreased cookie sheets. Bake for 10 to 15 minutes or until just light brown. Do not over-bake. Cool and store in an airtight container.
