PORK TENDERLOIN IN SPICED BOURBON SAUCE
Category: Pork I - Tenderloins and Roasts
1/4 cup vegetable oil, Dijon mustard, bourbon, soy sauce and brown sugar
3 cloves garlic, minced
1/4 tsp ground ginger
1 tsp Worcestershire sauce
2 (1 lb each) pork tenderloins
Combine ingredients in a resealable bag adding the tenderloins and refrigerate overnight.
Grill 4 inch from hot coals for 15-25 minutes or until the pork has reached 165 degrees or has just lost its pinkness. Baste often while cooking. Do not overcook or it will be dry.
Let rest about 5 minutes before cutting in 1/2 - 3/4 inch slices to serve. NOTE: Makes good sandwiches
