GREEK MACARONI

3/4 cup olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced
Salt and pepper to taste
1 lb macaroni anchovy fillets (garnish)
3 medium tomatoes, peeled, coarsely chopped Greek olives (garnish)
1 small cucumber, peeled, halved, seeded and sliced
1 small red onion, chopped
1/4 chopped fresh Italian parsley
6 oz Feta cheese, crumbled

Combine 1/2 cup oil, the lemon juice, garlic, salt and pepper. Reserve. Cook macaroni in 4 quarts of boiling salted water until very al dente. Drain and toss in a large bowl with remaining 1/4 cup oil. Cool to room temperature. Stir.

Add tomatoes, cucumber, onion and parsley. Mix well. Add dressing and mix. Gently stir in most of the cheese. Garnish with anchovy fillets, olives and remaining cheese. Serves 6 as a main course, 10-12 as a salad.

Serve with a Sauvignon Blanc, white Bordeaux or Pouilly Fume.
