LEMON MARSHMALLOW BARS

Crust
1 1/2 cups flour
3/4 cup confectioners sugar and butter

Filling
1/2 cup water
2 envelopes unflavored gelatin
2 cups sugar
1/2 cup water
1 tsp lemon extract
8-12 drops yellow food coloring
1 tbsp grated lemon peel

Glaze
1 cup milk chocolate chips
3 tbsp shortening

Preheat oven to 350. Crust: Combine flour and sugar in a bowl. Cut in butter until mixture resembles a coarse meal. Press mixture in an ungreased 13x9 inch baking pan. Bake for 15-18 minutes or until light golden brown. Cool.

Filling: In a large bowl combine 1/2 cup water and gelatin; set aside. In a medium saucepan, combine sugar and water; bring to a boil. Boil for 2 minutes. Pour over gelatin; mix well. Cool 5 minutes in refrigerator. Beat 5-10 minutes at highest speed or until very thick. Add extract and food coloring; beat well. Fold in lemon peel. Pour over cooled crust. Refrigerate to set.

Glaze: In a small saucepan over low heat, melt chocolate chips and shortening; stirring constantly. Spread or drizzle over filling. Cut into bars; cool completely.
