PORK TENDERLOIN WITH SESAME STUFFING

2 (1 lb) pork tenderloins
1 beef bouillon cube
1/4 cup boiling water
1/4 cup chopped celery
2 tbsp minced onion
1/4 cup butter
1/4 cup lightly toasted sesame seeds
2 cups coarse fresh bread crumbs
1 egg, slightly beaten
1/2 -1 tsp poultry seasoning and salt
1/8 tsp pepper
4-6 strips bacon

Butterfly tenderloins by slicing lengthwise but not cutting completely through. Open each tenderloin to make a flat piece. In a small bowl, dissolve bouillon in water. In a medium saucepan, saute celery and onion in butter until onion is transparent. Mix lightly with bouillon, sesame seed and next 4 ingredients.

Spoon stuffing onto 1 tenderloin, cut side up; place second tenderloin on top with cut side down. Cover with 4-6 strips of bacon. Wrap string around and tie to hold tenderloins together. Sprinkle with salt and pepper. Place on rack in shallow roasting pan. Bake at 350 for 1 hour. Serves 6
