SWEET POTATO GRAHAM CRACKER CRUNCH

3 lb sweet potatoes, cooked with skins on, mashed
4 oz butter, melted
1/2 cup brown sugar, packed
1/4 cup orange juice
1 1/2 tsp cinnamon
Salt, to taste
1 1/2 cups graham cracker crumbs

Combine mashed sweet potatoes with 4 tbsp butter, and next 4 ingredients. Mix well. In a separate bowl, combine graham cracker crumbs with remaining melted butter. Spread potato mixture in a butter 2 quart casserole dish. Top with buttered crumbs. Bake at 400 for 20 minutes or until hot and bubbling. Serves 8
