PARTY SALMON BALLS

1 (15 1/2-oz) can salmon
3/4 cup bread crumbs
1/3 cup finely chopped onion
1 egg, beaten
1 clove garlic, minced
1/4 tsp salt
Dash pepper
3 tbsp butter
3 tbsp lemon juice
2 tbsp minced parsley
Drain salmon, reserving liquid; flake meat.
Combine flaked salmon, reserved salmon liquid, bread crumbs, onion, egg, garlic, salt and pepper. Shape into balls about 1-inch in diameter. Chill salmon for at least 30 minutes.
Melt 3 tbsp of butter in a skillet and add salmon balls. Saute until salmon is browned on all sides. Transfer salmon to a chafing dish or warm serving dish.
Add lemon juice and parsley to skillet. Simmer mixture for a few minutes while stirring to blend. Pour lemon and parsley sauce over salmon balls. Serve warm as an appetizer.
Makes approximately 3 dozen.
