PEACH SHORTCAKE

2 tbsp sugar
2 cups peeled, sliced peaches
1 tsp lemon juice
2 cups buttermilk biscuit mix
1/4 cup sugar
1/2 cup milk
4 tbsp melted butter
Sweetened whipped cream (optional)

Mix together sugar, peaches and lemon juice. Set aside. Combine remaining ingredients. Pour batter into a 9-inch cake pan that has been lightly coated with non-stick spray. Bake at 375 for 15 to 20 minutes. Top shortcake slices with 1/4 cup peaches and sweetened whipped cream, if desired. Serves 8
