CREAMY PARMESAN RICE WITH CHICKEN CASSEROLE - Easy

1 tbsp oil
4 boneless, skinless chicken breasts
3 cloves garlic, minced
1 box chicken flavored rice mix
2 (14 1/2 oz) can chicken broth
1 cup shredded parmesan cheese
1 cup frozen peas, thawed

Heat oil in a skillet. Cook chicken until lightly brown on both sides, 5-7 minutes; season with salt and pepper, if desired. Add garlic, cook briefly. Stir in rice, seasoning packet and the chicken broth. Bring to a boil.

Cover, reduce heat; simmer 20 minutes, or until chicken juices run clear and rice is tender. Remove form heat, stir in cheese and peas. Cover and lest stand 5 minutes before serving. Serves 4
