GRILLED GULF SHRIMP SKEWERS

6 wooden skewers
2 tbsp olive oil
6 jumbo Gulf shrimp, peeled and de-veined
Pinch of salt
1 tsp chili powder
1/2 tsp ground cumin
Juice from 1 lime
2 tsp chopped cilantro

Soak skewers in water for 30 minutes. Heat large grill pan over medium-high heat and brush with olive oil.

Season the shrimp with 1 tbsp olive oil, salt, chili powder and cumin. Thread shrimp onto skewers and add to the grill pan. Grill until opaque, about 4 minutes on each side. Squeeze lime over skewers and sprinkle cilantro over top to garnish.
