EGGNOG PIE

Category: Pies - Cream and Custard

2 envelopes unflavored gelatin
4 cups eggnog
1/4 cup sugar
1/4 tsp nutmeg
2 tbsp rum
1 cup heavy cream, whipped
1 prepared cookies pie crust

Soften gelatin in 2 cups eggnog on top of a double boiler. Add sugar and stir until thoroughly dissolved. Add remaining eggnot, nutmet and rum. Chill.

Whip chilled mixture until light and fluffy and then fold in whipped cream. Pour into pie crust and chilled until firm. Garnish with additional whipped topping and cherries, if desired.
