ITALIAN TOMATO SALAD

6 plum tomatoes or 3 large tomatoes, chopped
1 small red onion, thinly sliced
1 tbsp minced fresh basil and oregano
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
3 tbsp olive oil and red wine vinegar
1/4 cup crumbled gorgonzola cheese
Garnish: croutons

Combine tomato an onion in a bowl. Combine next 7 ingredients in a small bowl; add to tomato mixture, tossing to coat. Sprinkle with cheese. Chill 8 hours. Garnish.
