WARM SPINACH SALAD WITH BACON THYME DRESSING

2 bunches spinach, washed and trimmed
8 slices pepper bacon
2 clove garlic, minced
1 small onion, minced
1/2 tsp dried thyme
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
3 tbsp olive oil
1 tsp cracked pepper
Salt, to taste
4 oz Gouda cheese, cubed

Pat spinach dry and add to a bowl. Cook bacon until crispy and remove from pan and crumble; set aside. Place pan back on heat and saute garlic and onion, about 2-3 minutes. Remove from heat; add thyme, vinegar and mustard. Mix well. Add olive, season with pepper and salt; blend thoroughly. Return pan to heat; bring dressing just to a boil. Immediately pour over spinach and toss. Top with crumbled bacon and cheese. Serve immediately while still warm. Serves 6
