* GRILLED MARINATED VEGETABLES *

6 zucchini, 2-3 inches long, cut in half lengthwise
6 Japanese eggplants, 4-6 inches long, cut in half lengthwise
6 yellow squash, 2-3 inches long, cut in half lengthwise
1 cup wood chips, soaked in water
Marinade
3/4 tsp salt and sugar
1/4 tsp pepper
2 oz red wine vinegar
1 tsp dried oregano and thyme
1/2 cup olive oil
1-2 cloves garlic, minced
Prepare grill. Mix marinade ingredients and add vegetables. Let stand while grill is heating up. When coals are hot, add wood chips.
Remove vegetables from marinade; reserving marinade. Add vegetable to grill under indirect heat; close lid and smoke vegetables 10-15 minutes. Open lid and continue grilling, turning vegetables occasionally and brushing with marinade until they become tender, about 15-30 minutes. or to desired doneness.
NOTE: Other vegetables that I add are 2 large green, yellow or red bell peppers, cut in half lengthwise, seeds removed, Portobello mushroom slices, about anything you like.
