1/2 cup sour cream and plain yogurt
1 tbsp chopped fresh dill and lemon juice
1/2 tsp salt and pepper, divided
1 lb fresh salmon, cut into 1 inch pieces
1 1/2 cups panko crumbs, divided
1 egg white
1 tbsp Dijon mustard
1/2 cup cornichons
1/4 cup fresh parsley, basil and chopped green onion
1/2 cup butter
Chopped dill and lemon wedges, garnish

In a medium bowl, combine first 4 ingredients and 1/4 tsp salt and pepper; refrigerate until ready to use.

In a food processor, combine salmon, 1 cup panko crumbs, next 6 ingredients and remaining 1/4 tsp salt and pepper. Process until chunky paste forms. Shape mixture into 4 equal patties. Dredge in remaining panko crumbs.

In a skillet, melt butter over medium heat and fry patties until lightly browned, about 3-4 minutes per side. Drain on paper towels. Spoon sauce over crouquettes and garnish. Makes 4 croquettes.
