CREOLE CHICKEN SOUP - Easy

2 tbsp vegetable or olive oil
1 cup chopped onion and green or red bell pepper
1 cup frozen whole corn
2 cloves garlic, minced
1 (14.5 oz) can petite diced tomatoes
2 cups chopped cooked chicken
1 1/2 tsp Creole seasoning
1 (32 oz) carton chicken broth
Garnish, sour cream, chopped fresh cilantro

In a Dutch oven, heat oil and add the vegtables and garlic; saute until tender. Stir in the tomatoes and chicken. Sprinkle with seasonings and bring to a boil. Reduce heat and simmer 20 minutes. Garnish if desired. Serves 6-8
