LEMON VODKA COOLERS

1/2 cup simple syrup (see note)
1 cup fresh lemon juice
1 1/2 cups vodka
1 liter chilled club soda
Ice cubes
Lemon slices for garnish

In a pitcher combine the simple syrup, lemon juice, vodka and club soda. Stir to mix. Pour over ice in cocktail glasses and garnish with lemon slices.

NOTE: To make simple syrup, combine 1 cup water and 1 cup sugar in a small saucepan over medium heat. Bring to a simmer, whisking occasionally until the sugar dissolves and mixture is clear. Cool. Store in the refrigerator for up to one month. Serves: 8
