SHRIMP REMOULADE ON TOAST

1 cup mayonnaise
1/4 cup minced green onions
1/4 cup minced celery
1/4 cup chopped fresh parsley
1/4 cup Creole mustard
1/4 tsp Old Bay seasoning
1 (16-oz) pkg frozen cooked small shrimp, thawed and drained
2 (8-oz) pkg toasted bread rounds
3 cups finely shredded iceberg lettuce

In a medium bowl, combine mayonnaise, green onions, celery, parsley, mustard, and Old Bay seasoning. Add shrimp, tossing gently to combine. Cover and chill for at least 2 hours or up to 24 hours.

Top each bread round with shredded lettuce; spoon shrimp mixture evenly over lettuce. Serve immediately. Makes appetizer 20 servings
