MEXICALI CASSEROLE

2 cups elbow macaroni, cooked al dente, drained
1/2 tsp olive oil
1 lb ground beef
1/2 cup onions and green or red bell pepper, chopped
1 pkg taco seasoning mix
1 can dark red kidney beans, undrained
1 large can tomato sauce
1/4 cup milk
2 cups shredded sharp cheddar cheese
1/2 cup shredded sharp cheddar cheese, topping

Preheat oven to 375. Spray a casserole dish with cooking spray. In a skillet over medium heat, brown meat with onions and peppers. Stir in taco seasoning mix, beans and sauce. Reduce heat and simmer, uncovered, for 5 minutes; set aside.

Combine cooked pasta, milk and cheese in a bowl; set aside.

Layer half macaroni mixture and half sauce. Repeat layers. Bake, uncovered, for 20 minutes or until heated through. Top with remaining cheese. Bake, uncovered, about 5 minutes or until cheese melts. Serves 8
