RIGATONI WITH CHICKEN

4 boneless, skinless chicken breasts, sliced
1/2 cup oil-packed sun-dried tomatoes, drained and oil reserved
3 tbsp chopped shallots
2 tbsp chopped garlic
1 cup dry vermouth
1/4 cup butter
1/2 cup chopped fresh basil
Salt and pepper, to taste
1 lb rigatoni, cooked al dente, drained

While pasta is cooking, saute chicken in sun-dried tomato oil in a large skillet, then remove from pan. Add sun-dried tomatoes, shallots and garlic. Cook 2 minutes stirring frequently.

Return chicken to pan and add vermouth. Cover and simmer for 1-2 minutes. Add butter and basil and mix until butter is incorporated. Add salt and pepper. Stir in rigatoni and serve. Serves 4
