SPAGHETTI WITH SHRIMP AND MUSHROOMS

3/4 lb medium shrimp, shelled and deveined
1 lb mushrooms, sliced
1 bunch scallions, coarsely chopped
1 cup chopped parsley
1/2 lb spaghetti
1 egg
1/2 cup half and half or light cream
1/2 cup grated parmesan cheese
4 tsp anchovy paste
1/2 tsp dry pepper
1/8 tsp pepper
3 tbsp olive oil
2 cloves garlic, crushed
Cook pasta according to pkg directions. Meanwhile, in a large skillet, warm 2 tbsp olive oil until hot. Add garlic and mushrooms and stir-fry until mushrooms are almost limp, about 5 minutes. Add remaining 1 tbsp oil and the shrimp, stir-fry for about 2 minutes. Add the scallions and stir-fry until the shrimp turn pink and opaque, 1-2 minutes longer.
In a large bowl, beat the egg, stir in the cream and the remaining ingredients. Set aside. Drain pasta and place into serving bowl. Pour beaten egg mixture over the hot pasta and toss to cook the eggs well as to coat the pasta. Add the stir-fry mixture and toss to distribute. Serve hot.
