3 lbs potatoes, peeled and sliced
1 large yellow onion, sliced thin and separated into rings
Dry vermouth
1/2 cup butter
Dry parsley, salt and pepper

Spray a 13x9 inch baking pan with cooking spray and begin layering into the pan in the following order: potatoes, onion rings, sprinkle with salt and pepper and parsley. Continue to top of pan, leaving onions rings off the top layer.

Slice butter into pieces and scatter over top layer. Pour wine into pan; half the depth of the potatoes. Cover and bake at 350 for 1 hour or until tender. Remove cover and bake until lightly brown on top.
