BACON CHEESE SPREAD
Category: Spreads -- Cold
2 cups shredded sharp cheddar cheese
1/4 cup dijon mustard
2 tbsp butter, softened
1/8 tsp coarse ground black pepper
1/4 cup dry white wine or beer
2 tbsp chopped scallions
4 slices bacon, cooked and crumbled
Crackers or bagel chips
In a food processor, combine first 4 ingredients until cheese is finely chopped.
Heat wine or beer to a boil. With processor running, slowly pour hot liquid into cheese mixture, continue processing until fairly smooth. Stir in scallions and bacon
Transfer to a serving bowl and chill at last 2 hours before serving. Alle to stand at room temperature 1 hour before serving.
Serve with crackers or bagel chips.
