CLAM BISQUE

2-4 cloves garlic, minced
2 celery stalks, minced, leave and all
1 small onion, chopped
2 sprigs parsley
3/4 stick butter
5 tbsp flour
2-3 dash paprika
1 cup clam juice or dry white wine
1 cup minced clams
2 cups cream
1 quart milk
Tabasco sauce, white pepper and salt, to taste

Saute vegetables and parsley in a saucepan in butter. Add flour and paprika to form a roux and cook over low heat approximnately 10 minutes.

Meanwhile, heat clam jice and clams together in a small pan and add to roux mixture.

Add cream and milk until creamy consistency develops. Add seasonings to taste.
