COCONUT SHRIMP AND APRICOT-GINGER SAUCE

Apricot Ginger Sauce
18-oz apricot preserves
1 tbsp fresh ginger, grated
1 tbsp soy sauce
1 tbsp cider vinegar
Toasted Black Sesame Seeds, for garnish, optional
Combine Apricot Ginger Sauce ingredients, except sesame seeds, in small saucepan and simmer on low for 10 minutes. Set aside.
Coconut Shrimp
3 lb, 26-30 count, shrimp, shelled and deveined
1 cup flour, for dusting shrimp
1 cup flour, for batter
1 quart soda water
2 cups fresh coconut flakes, unsweetened
Combine flour with soda water to make batter. Dust shrimp with flour and dip in batter to coat. Roll shrimp in coconut flakes. Deep fry until golden brown. Serve with Dipping Sauce.
