SOUTHWESTERN PORK BURRITOS - Crock pot

21/2 lb well-trimmed pork boneless shoulder roast
1 (10 oz) can diced tomatoes and green chilies, undrained
3 tbsp tomato paste
1 tbsp honey
3 cloves garlic, finely chopped
1 tbsp chili powder
1/4 tsp salt
12 (8-10 inch) flour tortillas
Toppings: shredded cheese, sour cream, chopped fresh cilantro, shredded lettuce, diced tomatoes, salsa

Place pork in a slow cooker. Place the next 6 ingredients in a blender and blend on medium-high speed 10 seconds, stopping blender frequently to scrape sides. Pour over pork.

Cover and cook on LOW heat setting 8-10 hours or until pork is very tender. Remove pork and shred. Stir back into sauce.

To serve, spoon filling onto tortillas; roll up and serve with toppings. Serves 12
