CAMEMBERT CREMES

2 (3 oz) pkg cream cheese, softened
1/3 cup minced red onion and finely chopped fresh parsley
1/2 tsp salt and pepper
2 (8 oz) rounds Camembert or Brie cheese, divided
1 1/2 cups finely crushed Italian seasoned croutons
Chopped parsley

Stir together first 5 ingredients in a small bowl. Set aside. Trim rim from cheese rounds and cut into 16 wedges. Place wedges on waxed paper and flatten and shape wedges into 3 inch circles.

Place 1 tsp cream cheese mixture in center of each circle. Gently wrap cheese sides around filling and roll into balls. Combine crushed croutons and parsley and roll cheese balls into mixture. Chill at least 1 hour before serving.
