PANZANELLA BREAD SALAD

Category: Salad

1 loaf day-old French bread
2 medium tomatoes, diced
1 onion, sliced
1 cucumber – peeled, seeded and sliced
1/8 cup chopped parsley
2 tbsp capers, drained
1/4 cup fresh basil, chopped

Dressing
2 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp lemon juice
1 clover garlic, crushed
Salt and pepper, to taste
1/8 cup grated parmesan cheese

Combine all dressing ingredients in a large bowl and whisk until smooth. Add remaining ingredients and toss well. Allow to stand at room temperature for about 30 minutes. Toss again and serve.
