2 cups finely chopped celery
5 green onions, finely chopped
1/4 cup water
1/2 cup finely chopped ham
1/3 cup dry seasoned bread crumbs
1/4 tsp ground nutmeg
1 slightly beaten egg
1 cream puff recipe
1/8 tsp pepper
1/3 cup grated parmesan cheese
Line baking sheet with foil and then grease the foil. Set baking sheet aside.
For filling: in a saucepan, combine celery, onions and water. Bring mixture to a boil and reduce heat. Cover and simmer 6-8 minutes or until vegetables are tender. Drain well. Stir in ham, bread crumbs and nutmegs. Slightly cool filling mixture.
Stir egg into mixture and drop rounded tsp 2 inch apart on prepared baking sheet, mounding the filling slightly. Set aside.
Prepare cream puff pastry as directed, except omit salt. Add pepper with the flour to the pastry dough. After beating the eggs into the dough, stir in the parmesan cheese.
Spoon the dough into a decorating bag and pipe the dough around the filling mounds in a circle, starting at the base and working toward the top, leaving the tops of the filling uncovered. Bake at 400 for 18-20 minutes or until golden brown. Remove cream puffs from the baking sheets and cool slightly on wire racks. Serve warm. Makes 35-40.
